Lemony Date Energy Snack Balls

I’m brand new to the snack ball arena, and I have been missing out! I’ve been playing with a variety of recipes, and found one that I absolutely love!

Lemon Date Energy Balls

I was looking for a citrus-flavored option that could be very versatile and came up with this tasty 3-ingredient base that you can change up any way you want. It starts with dates, lemon juice, and oats… that’s it!

Ingredients:

1 1/4  cup of oats
1 cup of dates, without pits
Juice from 1 large lemon, about 4 tbsp

Directions:

Chop the dates and place all of the ingredients into a food processor. Add any additional ingredients that you may want to include (vanilla extract, lemon or orange zest, almonds or walnuts, etc.) Use the pulse function until the ingredients are well-mixed. Add a tablespoon of water to the mix (you will need a little more if you add dry ingredients like nuts!) and pulse until the mix starts to clump together. Remove the mixture and use a tablespoon to portion out the mixture. Roll into balls and enjoy! Feel free to refrigerate and save for later!
