After making homemade pesto with basil from my patio plant, I had plenty to spare! While I love pesto pasta and pesto on sandwiches, I was looking for something different.
Behold! Earthy mushrooms, with bright simmering tomatoes, sautéed potatoes and garlic, smothered in pesto and topped with eggs your way. Enjoy!
