Summertime is when I start craving salad. I still eat salad in the winter, but something about a crisp, green salad with all the goodies on top screams summer to me. My favorite combo is spring mix with walnuts, dried cherries, goat cheese, and granny smith apples! It’s a meal all on it’s own or you can add grilled chicken for a protein boost. To me, the best part of a refreshing summer salad is a great dressing!
I mentioned confusing food labels in a previous post, and sadly one of the products on the grocery store shelf that has useless terms and unnecessary, impossible-to-pronounce ingredients is salad dressing. Store-bought salad dressing often has added sugar, lots of sodium, preservatives, and artificial colors and flavors.
Not to worry, though! Turns out, you can make delicious salad dressing in 2 minutes with only 4 ingredients that you probably already have in your pantry!

If you have olive oil, vinegar, salt and pepper, you have salad dressing! Follow the steps to make your very own Balsamic Vinaigrette. You don’t need to add anything extra to this deliciously simple vinaigrette, BUT if you’re feeling creative, you can switch out or add in fun ingredients to give this dressing some flare!
You can use any vinegar- try balsamic, white, red wine, white wine, apple cider, or even mix different vinegars.
